The fruit was harvested in the cool of the night to retain thefresh, clean varietal characteristics of Sauvignon Blanc. Thefruit was crushed and pressed, with the juice settled under coolconditions before being racked off the lees and fermented undertemperature control to ensure the varietal Sauvignon Blanccharacters are preserved. A small portion of the juice wastransferred to the barrel for fermentation to add somecomplexity to the wine. The wine was then fined, filtered, andsent to bottle showcasing the perfectly crisp, clean aromas andflavours of a Margaret River Sauvignon Blanc. Vegan friendly.
