Poonawatta 'The Cuttings' Eden Valley 2018 Shiraz
The Cuttings is produced from a small vineyard established from cuttings taken from the original 1880 vines. Planting started in the late ‘70s by taking cuttings from the 1880 vines and digging them into the stony soil. Each year a few more rows were added until the vineyard was completed in 1982. The Cuttings Shiraz delivers the structure and depth of its lineage; the result – an elegant cool climate Shiraz and a worthy protégé of The 1880.

Moonfish Denmark Chardonnay 2021
A brilliant, fresh, green straw colour. A complex, perfumed nose of citrus and fresh nectarines balanced by toasty french oak and a savoury cashew barrel ferment character.
The use of free-run juice has produced an impressively elegant cool climate chardonnay, achieving a perfect balance between delicate fruit flavours, texture and length.
Initial flavours of grapefruit and stone fruit lead to a richer and more textured mid palate that finishes with lingering citrus acidity balanced by spicy French oak.

Destemmed and pressed directly to tank for wild, or un-inoculated fermentation. Roughly 10% red wine added back post fermentation with full lees. Harvest 25/03/21. Baumé 11.7, pH 3.49. Destemmed and pressed directly to tank for ferment. Wild ferment completed very quickly, but the wine remained on gross lees for a further 3.5 months. Racked in mid-July with an addition of SO2. Passed through a coarse filtration in early August to remove some cloudiness before bottling on 25/8/21.
